Chicken Spaghetti

This recipe had very subtle flavours, the sauce is very light and allows the peppers, mushrooms and onions to really shine.  It also freezes very well, I froze half of the casserole in one serving sized containers and enjoyed it for a quick lunch this past week.

Although it takes awhile to cook the chicken and make the stock, it really is worth the effort.  I did make a note in the recipe if you are in a hurry and don’t want to cook the chicken yourself!  I used the stock in this recipe for cooking some lentils I will use in next Monday’s post so even though it took some extra time, it worked out well for me.
